Healthy MealUlcer Meals
Garlic sweet potato soup.
You’ll need:
1 tablespoon Oil
1/2 small onion minced
1/2 teaspoon thyme
2 sundried attarugu(scotch bonnet) crushed
1/2 tablespoon tomato paste
1 medium sweet potato peeled and diced into small cubes
1/2 teaspoon salt
1 teaspoon chicken stock powder
1 cup water
3 garlic cloves minced
1 tablespoon butter (optional)
2 tablespoons heavy cream (optional)
Procedure:
- In a pot add the oil, minced onion, thyme, attarugu and tomato paste. Turn on the heat to medium low and sauté these until they become fragrant.
- Add the cup of water and add your potato cubes to the pot. Season with salt and stock powder. Also add the minced garlic at this point. Stir well, cover and let it cook on low for about 10 minutes. The potatoes will soften and be easy to mash or blend at this time.
- When the potatoes are soft use a blender to puree everything or use a potato masher to crush the potatoes into a paste (that’s if you don’t mind lumps)
- Add the butter and heavy cream (if using).
- Serve hot or cold plain or with a side of croutons or grilled cheese sandwich.
